Note that all these recipes are written by Chef Nick and in the narratives he uses the first person a lot.  But hey... his name is on the jar's.

Today in many, if not most, American households both adults have careers outside the home.  When this is combined with the after-hours schedule pressure of an active family, planning, shopping for, and preparing the 260+ dinners you’ll eat at home this year is a real challenge.  It’s hard enough to toss some ground meat together with “something from a box” for a boring meal let alone trying to do something new and exciting.

Many of the recipes in this section of our web site are tagged as “Time Stretcher” meals.  These are special meals that combine our blends with easy to find budget-friendly ingredients and low-effort cooking techniques.  The Time Stretcher meals have only 15 to 20 minutes of preparation time, require no special tools or techniques, and mess-up an absolute minimum number of utensils.

Also, the Time Stretchers are designed so that your middle/high school children can competently and safely prepare an incredible evening meal for the family.  Imagine coming home from work to find a Goulash befitting the finest café in Budapest or a Tagine straight from one of the Bazaar bistro’s of Casablanca and your daughter or son beaming with the accomplishment… and only one pot dirty.

Chef Nick’s Rubs and Blends have 100% of the seasonings needed to support the recipes they’re used in… REALLY.  The amount of salt (Kosher, Sea, or Smoked) in each blend has been carefully determined based on the following things:

  1. How much salt is needed to make it taste RIGHT.
  2. Not exceeding Mayo Clinic and/or American Heart Association recommendations for people who are not on a STRICTLY controlled sodium diet.

So, if your doctor says NO extra sodium, don’t use our products, they ALL have some salt in them.

If your doctor says a LOW sodium diet, then use our products, we conform to Mayo Clinic and AHA guidelines.

With the exception of boiled or mashed potatoes, salt is the one seasoning that can be added at the table.  Please try our recipes without any added salt first… you’ll be surprised.
