Properly cooked rice plays a vital supporting role in any meal. Get the rice "wrong" and it can just as easily ruin the meal. Here is an absolutely foolproof way to cook rice so that you always serve a light and fluffy rice with a just noticeable nutty aroma and flavor. This method works for all long grain rices.

Figure 1/4 cup of uncooked rice per serving.

Wash the rice TWICE in COLD water and leave it in the sieve until it's no longer dripping.

Use a straight sided sauce pot with a tight fitting lid.

Add 1/4 tsp salt per TWO servings to the pan along with 1 tsp of olive oil per serving.

Add the washed and drained rice to the pot and stirring frequently (over medium heat) lightly toast the rice. Many of the kernels should begin to turn a light brown color. Continue this until about 1/3 of the kernels have changed color.

While step 5 is underway pre-heat 1/3 cup of water (or stock) to just below boiling.

Remove the pot with toasted rice from the heat, quickly (but carefully because it will boil instantly and somewhat violently) add the water/stock and immediately put the lid on the pot. When it quits the "eruption" put it back on LOW heat at at bare simmer for 10 minutes.

Do NOT stir or even open the pot. Remove the pot to a cool burner and let it rest for 5-7 minutes COVERED.

Fluff the rice with a fork and it will be perfect.
