Many good dishes become great dishes because they are sauced perfectly. A well prepared sauce frequently adds a new dimension to a meal by capturing cooking flavors that otherwise may be lost. When the texture of the sauce compliments that of the main ingredient in the dish it will balance out the “mouth feel” and take the dish up to the next level.
